Some time during February or March the sap begins to flow at Shaws Maple Syrup Bush. This usually occurs on a warm day, +3 c, after a frosty night, below -3 c. The change in the temperature creates sap flow in the tree. Sap is gathered from 6000 taps and boiled into Maple Syrup. It takes approximately 40 gallons of Maple Sap to make 1 gallon of Maple Syrup.
